1. Crack three med-sized eggs into a bowl and using a whisk, blend the whites and yolks together until the yolk is spread evenly throughout. Season with salt and pepper.
2. Heat a clean non- stick shallow frying pan around 7-8 inch in diameter
3. Add a small cube of non-salted butter, about the size of a standard playing dice. Add a dash of oil and heat. The butter will add flavour to the omelette and make it a nice golden colour. The oil will stop the butter from burning.
4. When the butter begins to sizzle, pour your eggs into the pan. Taking a wooden spoon, stir the eggs vigorously spreading them around the pan patting them down to fill the space. Turn down the heat.
5. Add fillings of your personal preference. I recommend feta cheese, sliced olives and fresh sliced tomatoes. Spread the ingredients evenly on the surface.
6. Cook the omelette until its surface is still slightly translucent and runny and then shake it out onto a plate (use a spatula if this proves tricky) and fold the omelette in half. The heat from the rest of the omelette will cook through the surface and seal your ingredients.
7. If the omelette is overcooked it will crack and fall apart when you try and fold it or stick to the bottom of your pan.
8. Serve with salad.
